This is a variation of a BLE breakfast favorite that got shared around a lot in my boot camp back in the day. I think other boot campers called it Baked Apple Breakfast. I’ve put my own little Katie spin on it. Enjoy!
Baked Apple Boats
Each Serving Contains:
- 1 Grain
- 1 Protein
- 1 Fruit
- 1 oz dry rolled oats or quick cooking steel cut oats
- 0.5 oz dry roasted pecans or other nuts (1/4 protein serving)
- 1 oz peanut butter or almond butter (1/2 protein serving)
- (Optional: thin with some water to make a nut butter drizzle)
- 2 oz yogurt (1/4 protein serving)
Alternative Protein Options:
- Use 3/4 of a serving of nut butter as a topping
- Use 3/4 of a serving of yogurt as a topping
- For maintenance, add more of these two toppings
- For more creative eaters, mix the yogurt and nut butter together with a little water to make a sauce!
- 1 large apple (I love honeycrisps)
- 2 tsp lemon juice
- Apple Pie Spice (or see below)
- 1/4 tsp cinnamon
- 1/8 tsp nutmeg
- 1/8 cardamom
- 1/8 tsp allspice
*These measurements comply with the Bright Line Eating female weight loss food plan. Adjust quantities as needed for your own individual food plan.
- Grain Additions: Increase amount of oatmeal
- Protein Additions: Increase nuts, nut butter, or yogurt
- Fat Addictions: Increase nuts or nut butter
- Preheat the oven to 350 degrees.
- Cut the apple into quarters and using the tip of a sharp knife, carefully cut out the centers, removing the core but saving the rest. The goal is to leave an apple-boat behind to put the filling into.
- Dice the apple that you carved out.
- In a small pot or small skillet, combine the oats, 1/2 cup of water, the diced apple, lemon juice, and spices.
- Cook for 5 minutes over low heat, stirring occasionally, until the oats are cooked and the apples are softened.
- Spoon this mixture into the scooped out apple boats and place in a cast iron skillet or baking dish.
- Sprinkle the apple boats with cinnamon before baking.
- Bake them in the 350 degree oven for about 20 minutes with a lid to keep the moisture in.
- Remove the lid and bake for 10 minutes, to crisp them up a little bit.
- Meanwhile, prepare your protein toppings.
- Peanut Butter Sauce: I like to thin out my peanut butter with some water to make a pourable sauce. Some people like to add yogurt to the peanut butter with a little water to make a creamy sauce. I prefer to keep my yogurt and nut butter separate, I think the flavors are more interesting that way, but if that interests you, go ahead and experiment!
- Remove the apples from the oven when they are lovely and soft.
- Pour the peanut butter sauce on top, garnish with a dollop of yogurt, and sprinkle the pecans (and maybe more cinnamon) on top.
- Admire how pretty and delicious your meal is, feel gratitude and then mash it all up and eat it!
Recipe Notes & Variations
- Use only nut butter as the filling by coring the apple and stuffing it with nut butter, microwaving or baking until soft, and adding the toppings.
- Add part of your nut butter into the filling.
- Stuff the boats with a raw mixture of diced apples, peanut butter, lemon juice, and spices. Serve over a bed of cooked oats.
